Flying Dolly’s, a Gulf South ice cream and snoball brand, is expanding its footprint in Mississippi with plans to open two new franchise locations in early spring 2026, the company announced.
The new shops will open in Gluckstadt, just north of Jackson, and in downtown Bay St. Louis near the Pearl Hotel at the intersection of Main Street and North Beach Boulevard. Both locations will be independently owned and operated by local families, continuing the company’s franchise-driven growth model.
The expansion marks Flying Dolly’s first entry into Gluckstadt and a return to Bay St. Louis as the brand strengthens its presence along the Mississippi Gulf Coast and central Mississippi markets.
“We couldn’t be more excited to welcome two outstanding families to the Flying Dolly’s team as we grow in markets that truly feel like home for our brand,” said Shane C. Mutter, president of Flying Dolly’s. “Both Gluckstadt and Bay St. Louis embody the warmth, energy, and Southern hospitality that define Flying Dolly’s.”
Franchise agreements for both sites have been finalized, and construction is underway. The Gluckstadt location is expected to open in March 2026, followed by the Bay St. Louis shop in April.
Flying Dolly’s said the Mississippi openings are part of a broader regional growth strategy that includes a mix of franchise and company-owned locations across Louisiana, Mississippi and Alabama, with plans to expand into the Florida Panhandle.
Founded in 2011 in Mandeville by Jeff and Corey Robertson, Flying Dolly’s has built a loyal customer base around its ice cream, snoballs and specialty desserts, including its Honeycomb Ice Cream and Signature Hummingbird Stuffed Snoball.
The company currently operates locations in New Orleans, Mandeville and Kenner in Louisiana; Brandon and Flowood in Mississippi; and Mobile, Alabama. Flying Dolly’s has been franchising for six years, focusing on locally based owner-operators to deliver what the company describes as a community-centered experience.
