Evolve Coffee + Matcha, a New Orleans-born café known for its ceremonial-grade matcha and craft coffee, plans to expand to the North Shore with a new location in Mandeville slated to open in spring 2026.
The café will open at 2891 Highway 190, marking Evolve’s first North Shore outpost and its fourth location overall. The expansion builds on the company’s existing presence in Metairie and Lakeview and reflects continued growth across Southeast Louisiana.
Founded in 2020 by New Orleans native Yvonne Pichoff, Evolve Coffee + Matcha has developed a loyal following for its matcha imported from Japan, specialty espresso drinks and intentionally designed café spaces. The Mandeville opening represents the brand’s next phase of expansion beyond the metro New Orleans area.
“As a Louisiana-born brand, expanding to the North Shore feels like the right next step,” Pichoff said. “We’re excited to become part of the North Shore community and to create a space where people can slow down, connect, and enjoy coffee and matcha that’s made with intention.”
The Mandeville café will feature the same open and relaxed aesthetic found at Evolve’s other locations. The space is being designed in partnership with AGL Commercial Interiors, a New Orleans-based firm that has collaborated on the brand’s previous cafés.
Customers can expect Evolve’s core menu, including matcha-based beverages, classic and specialty espresso drinks, and a curated selection of pastries and light bites. The company said additional details about the opening and any launch events will be announced closer to the debut.
Evolve Coffee + Matcha has positioned itself as a niche player in the region’s competitive café market by focusing on premium matcha offerings and community-oriented spaces. The move into Mandeville extends that approach to the growing North Shore market, where demand for specialty coffee concepts has continued to rise.
